How to Prepare Petit Pot's Coconut Matcha Rice Pudding
There’s no pudding this lightly… we’re obsessed with this new recipe. It’s satisfyingly smooth, indulgent but not too sweet, and will definitely have you coming back for more and more.
This fun and simple plant-based recipe is brought to you by our incredible friends at Petit Pot, made with Junbi matcha and just four other ingredients! 💛
Active time: 45 min | Total time: 5-6 hours
Here's what you'll need:
1 ½ cups water (350g) 1 cup coconut milk (250g) ¼ cup uncooked short grain rice (60g) 3 ½ tbsp sugar (50g) ¾ tsp Junbi matcha(2g)
Makes 4-5 servings
Here's how it's done:
STEP 1: PREPARE LIQUID MIXTURE
Bring the coconut milk, water, and sugar to a simmer over medium heat, stirring to dissolve the sugar.
STEP 2: ADD RICE
Once your mixture is simmering, add the rice and reduce heat to medium-low.
STEP 3: COOK & STIR
Cook at a gentle simmer for about 40 minutes, stirring occasionally to make sure your mixture doesn't stick to the bottom of the pot.
STEP 4: PREPARE MATCHA
While the rice pudding is simmering, whisk matcha with 1 oz water.
Note: This makes for a smoother pudding. If you don't mind the matcha speckles, you can skip this step and add the matcha powder straight into your finished rice pudding!
STEP 5: ADD MATCHA & PORTION
Once the rice is soft and most of the liquid has been absorbed, it's time to add your matcha! Mix to combine and portion into jars, tupperware, or any container you have!
STEP 6: REFRIGERATE
Refrigerate for 4-5 hours to set. The wait will be worth it, we promise!
STEP 5: ENJOY!
Once set, marvel at your beautiful creation, take some pictures for the 'gram (tag us at @preparejunbi and @petit_pot!), top with coconut flakes or cinnamon (if you'd like) and enjoy your plant-based Coconut Matcha Rice Pudding!
