Miso Caramel Matcha Latte with Miso Caramel Cold Foam

Salted caramel’s cooler, more interesting cousin has entered the chat. This miso caramel matcha layers a ribbon of miso caramel, cold milk and velvety whisked ceremonial matcha, then tops it all with a miso caramel cold foam and one last drizzle.

It’s salty, sweet, toasty and just a little bit savory. In other words, it’s exactly what fall should taste like.

What is miso caramel?

Miso caramel is caramel sauce with a spoonful of white miso whisked in. The miso adds a rounded, savory saltiness, like salted caramel with more depth. Against grassy, umami-rich matcha, it’s a natural match.

Why you’ll love it

  • Salty-sweet balance. Miso keeps the caramel from tasting cloying.
  • Caramel in every layer. There’s sauce at the bottom, in the foam and drizzled on top.
  • A proper ceremonial whisk. The matcha is whisked to a silky microfoam.
  • Café-worthy looks. Clean green-and-cream layers with a caramel lattice on top.

The matcha behind it

Junbi First Harvest Ceremonial Matcha is our everyday ceremonial matcha, made to be whisked straight, which makes it ideal for a latte where the matcha layer is the star. Explore the 30 g Daily Ceremonial Matcha tin or 80 g tin.

Ingredients (serves 1)

Matcha

  • 4 g (2 tsp) Junbi First Harvest Ceremonial Matcha
  • 60 ml (2 oz) warm water at 80°C (175°F)

Latte

  • 15 ml (1 tbsp) miso caramel sauce, plus extra for drizzling
  • Ice
  • 90 ml (3 oz) milk

Miso caramel cold foam

  • 10 ml (⅓ oz) miso caramel sauce
  • 60 ml (2 oz) cold heavy cream

You’ll need: a bamboo whisk (chasen), a matcha bowl, a fine sifter, a handheld milk frother, a small pitcher and a 300–355 ml (10–12 oz) glass.

How to make a miso caramel matcha latte

  1. Soak the chasen. Stand your bamboo whisk in warm water for a minute to soften the tines.
  2. Sift the matcha. Sift 4 g (2 tsp) First Harvest Ceremonial Matcha into your matcha bowl.
  3. Add water. Pour in 60 ml (2 oz) warm water at 80°C (175°F).
  4. Whisk to microfoam. Whisk briskly in an “M” motion, then gently skim the surface until the foam is smooth and fine.
  5. Make the cold foam. Add 10 ml (⅓ oz) miso caramel sauce and 60 ml (2 oz) cold heavy cream to a small pitcher, then froth until thick but pourable.
  6. Build the base. Spoon 15 ml (1 tbsp) miso caramel into your glass, add ice and pour in 90 ml (3 oz) milk.
  7. Layer the matcha. Slowly pour the whisked matcha over the milk.
  8. Top with foam. Gently pour the miso caramel cold foam over the matcha.
  9. Drizzle and stir. Finish with a lattice of miso caramel and stir before sipping.

Tips for the best miso caramel matcha

  • Soak your chasen first to make the tines flexible.
  • Sift ceremonial matcha to prevent clumps.
  • Warm the caramel sauce slightly if it’s too thick to drizzle.
  • Stop frothing while the cold foam is thick enough to float but still pourable.

Variations

  • Dairy-free: Use oat milk, barista-style oat creamer for the foam and coconut-based caramel.
  • Hot version: Stir caramel into steamed milk, pour the matcha over it and spoon foam on top.
  • Homemade miso caramel: Whisk 1–2 tsp white miso into warm caramel sauce, adjusting to taste.

Frequently asked questions

Does miso caramel taste like miso soup?

No. White miso is mild. In caramel it reads as salty, toasty depth, more like brown butter than soup.

What kind of miso should I use?

White (shiro) miso is the mildest and sweetest, so it’s best for caramel.

Can I use regular salted caramel instead?

Yes. You’ll lose a little depth, but the drink still works.

Do I need a bamboo whisk?

It gives the smoothest microfoam, but a handheld frother works too.
