How to Prepare Amazebowls' Matcha Granola using Junbi
You won’t believe how easy it is to make this matcha granola!
We teamed up with our incredible friends at Amazebowls to bring you this recipe for a fun and creative way to use our matcha.
Prep time: 5 min | Bake time: ~24 min
Here's what you'll need:
Liquid mixture
½ cup organic maple syrup
¼ cup coconut oil
2 tbsp Junbi matcha
Dry mixture
3 cups oats
½ cup demerara sugar
1 cup mixed nuts
Fruit/Add-ins
½ cup dried mango (diced)
½ cup dried figs (diced)
¼ cup goji berries
¼ cup sesame seeds
Here's how to make Matcha Granola:
STEP 1: PRE-HEAT
Preheat your oven to 325°F and turn the fan on.
STEP 2: HEAT LIQUID
Heat the coconut oil & maple syrup in a small saucepan (or microwave, whatever’s easiest for you!) on medium-low heat until well combined. You don’t want it to get too hot; just as long as it's warm enough to dissolve the coconut oil (about one minute).
STEP 3: WHISK IN MATCHA
Take your liquid mixture off the heat, add matcha, and whisk until everything is smooth.
STEP 4: MIX DRY INGREDIENTS
In a separate bowl, combine the oats, demerara sugar, and mixed nuts.
STEP 5: ADD IN LIQUID
Add your liquid mixture to the dry ingredients, mix, and coat everything thoroughly.
STEP 6: SPREAD ONTO BAKING SHEET
Spread your granola in an even layer on a lined baking sheet. The thinner the layer, the crunchier your granola will be! We’d recommend spreading it to about ½ inches.
STEP 7: BAKE, STIR & BAKE AGAIN
Bake for 12 minutes, then stir & pack the granola back down into an even layer. Return to the oven and bake for about 12 minutes (more or less, it depends on your oven and preference!)
STEP 8: TOSS IN THE FRUIT
Remove from the oven and let cool. When cool, toss in fruits and sesame seeds to combine.
