We are so excited to show you how to make Banana Spinach Matcha Pancakes, a better-for-you option that doesn't alter the taste of pancakes, a breakfast and brunch classic.
But before we get into that, New Year's resolutions... Let's talk about it. What were some goals you made for 2021? Where are you now almost 2 months into the year? No matter where you are in your life, or the progress you've made or haven't made, it's going to be okay! Change doesn't happen overnight, and progress isn't linear. Are you ready for these matcha pancakes?
Matcha - Hand-picked and stone-ground at our 100 year old farm in Uji, Japan, our matcha is immunity boosting and loaded with antioxidants.
Banana - This recipe doesn't use any additional sugar in the batter, but instead utilizes banana, a natural sweetener!
Chia Seeds - The addition of chia seeds in these matcha pancakes is so great as it is rich in nutrients and packed with good sources of minerals. Who knew something so small could be so beneficial to our bodies?
Spinach - This recipe contains a good helping of spinach. Don't be intimidated by the green batter or the incorporation of vegetables in your pancake. Spinach is a great source of calcium and loaded with Vitamin A.
Trust us, you'll love the outcome of these beautifully vibrant green, nutrients-packed pancakes. Maybe, possibly it can be paired with Dr. Seuss' green eggs and ham? We don't see why not!
Here's what you'll need:
1 cup flour
¼ tsp ground cinnamon
1½ tsp Junbi matcha powder
4 tbsp chia seed
1 tsp baking powder
1 large banana, very ripe
1 cup spinach
½ tsp vanilla extract
¼ cup + 2 tbsp milk
Makes a stack of 6 pancakes
Here's how to make Matcha Pancakes:
STEP 1: HEY BATTER, BATTER
STEP 2: CH-CH-CH-CHIA
STEP 3: GREASE THE PAN
STEP 4: COOK YOUR CAKES
Tip: When you pour in the batter, just pour it straight down and it will spread into a perfect circle. No need to move it aorund!
STEP 5: ENJOY!
