How to Prepare Matcha Overnight Oats

There’s nothing we love more than an easy make-ahead breakfast! Carmelisa from our Marketing Team developed this Matcha Overnight Oats recipe (and eats it every morning too!)

This quick ‘set & forget’ breakfast uses rolled oats, yogurt, chia seeds, Junbi matcha, and protein powder for a meal that will keep you feeling full and fueled for your day!

Prep time: 5 min | Set time: ~4-8 hours

Here's what you'll need:

Dry ingredients

1/2 cup rolled oats 
2 tsp chia seeds 
1 tsp matcha 
1 serving protein powder
(optional, she uses Vital Proteins' unflavored collagen powder
which we also offer in our shops as an add-on to any drink)

Wet ingredients

1/2 cup oat milk 
1/2 tsp honey (she recommends wildflower honey — it pairs well with matcha!)
2-3 spoons of yogurt (her favorite is vanilla cashew milk yogurt)

Fruit/Add-ins

½ banana, sliced
2-3 strawberries, sliced (or fruit of choice)

Here's how it's done:

STEP 1: MIX DRY INGREDIENTS

Combine your oats, chia seeds, matcha and protein powder (if using) in a jar. Make sure to mix thoroughly before adding your milk (trust us — we’ve done it the hard way)

STEP 2: ADD MILK

Add oat milk to the jar and mix away until everything is completely combined. 
*Note from Carmelisa: Using chopsticks or a butter knife to mix helps, especially if you’re using protein powder!

STEP 3: ADD YOGURT & HONEY

Add yogurt, then drizzle honey on top. You can either leave as is or mix it. 

STEP 4: REFRIGERATE

Cover the jar and put it in the fridge to thicken overnight (or at least 4 hours, until liquid is absorbed). Check for desired thickness in the morning – stir in a couple tablespoons of more milk if you’d like!

STEP 5: ADD FRUIT, SHARE & ENJOY

When you're ready to eat, add your choice of fruit or toppings. Marvel at your beautiful creation, take some pictures for the ‘gram (tag us at  @preparejunbi!), and enjoy your Matcha Overnight Oats straight from the jar!

Overnight oats can be prepped ahead of time (up to 2-3 days)
