How to Prepare Matcha Cheesecake Brownies

Matcha, cheesecakes, and brownies are already sooo good on their own. But when you combine them all... you get this beautiful, fudgy dessert! Junbi matcha provides a subtle, savory tone, making it the perfect complement to a sweet brownie base.

This recipe was first introduced to us by Claire from our Marketing Team and the moment we tasted them, we just knew we needed to share it with you!

Prep time: 20 min | Bake time: 30 min

Here's what you'll need:

Matcha Cheesecake Ingredients

8 oz cream cheese (room temperature)
¼ cup granulated sugar
1 tbsp Junbi Matcha 
4 oz white chocolate chips (melted) 
1 egg

Brownie Ingredients

½ cup sweet rice flour (or all purpose flour if gluten is not a concern)
1 tbsp cornstarch
½ cup granulated sugar
1 tbsp cocoa powder
¼ tsp salt
5 ½ oz semi-sweet chocolate chips
6 tbsp unsalted butter (diced) 
2 eggs
1 tsp vanilla extract
½ cup white chocolate chips (optional)

Makes 16 brownie squares

 

Here's how it's done:

 

STEP 1: PREPARE OVEN & PAN

Preheat your oven to 350 degrees and line an 8x8 square baking pan with parchment paper.
 

STEP 2: PREPARE MATCHA CHEESECAKE

Use an electric mixer on medium speed to beat cream cheese and sugar until combined, then sift Junbi matcha into the bowl and beat until fluffy. Lastly, add melted white chocolate and egg, beat until completely combined, and set aside.

STEP 3: MELT BUTTER & CHOCOLATE

Melt the diced butter over medium heat. Once completely melted, turn the heat to low and add in chocolate chips, stirring until melted. When finished, remove from heat and transfer to a large bowl.

STEP 4: ADD DRY INGREDIENTS

In the same bowl, add granulated sugar and whisk, then add eggs & vanilla extract and whisk until combined. Sift in sweet rice flour, cornstarch, cocoa powder, and salt, then (you guessed it!) whisk until smooth. 

Optional: Fold ½ cup white chocolate chips into the batter.

STEP 5: PORTION BROWNIE BATTER

Portion about ¾ of your brownie batter into a baking pan with parchment paper.

STEP 6: ADD MATCHA CHEESECAKE

Add the matcha cheesecake on top of the brownie batter in an even layer.

STEP 7: TOP WITH BROWNIE BATTER

Add remaining ¼ brownie batter on top of matcha cheesecake in tablespoon droplets.

STEP 8: SWIRL AWAY

Use a wooden chopstick to swirl brownie batter and matcha cheesecake into a beautifully marbled pattern.

STEP 9: BAKE

Bake brownies at 350 degrees for 30 minutes, rotating halfway through.

STEP 10: LET COOL

Let brownie cool completely in the pan and lift with parchment paper once cool.
Tip: Refrigerate brownies overnight for best taste!

STEP 10: SHARE, SLICE & ENJOY!
